How It’s Made:
For their Gran Reserva line of wines, the Siegel Family Winery in Chile uses their higher quality grapes. They take the destemmed, sustainably farmed Viognier grapes for this white and ferment them in stainless steel. They then age their wine, on lees, for six months, in second and third use French oak barrels. During that time, they stir the lees to add complexity.
Why We Like It:
This wine is all about the balance between oak and acid. You can smell the oak on the nose, but on the palate it’s not enough to drown out the acid of the Viognier grapes, which still punches through to make a nice, zippy white. Use this wine to tempt your friends and moms away from the big, oaky, buttery Chardonnays that they insist on drinking.

How It’s Made:
Weingut Freitag populates their Naked Friday line with German natural wines made from biodynamic grapes, farmed from just 2.5 hectares of vineyards. For this natural red, they use the relatively new German grape, Dornfelder (created just in 1956), which they carbonically macerate for seven days before pressing the juice into wooden barrels, where it continues to ferment. They then bottle the wine unfiltered and unfined with little or no sulfur.
Why We Like It:
Freitag says that their style is “fruity and acidic” and that, to that end, they pick their grapes early to capture their natural acidity. That description pegs the balance that you get in this light-bodied, slightly tart red. Put a little bit of a chill on it, and break out your richer foods. Try it with sausage and peppers, shrimp gumbo, or with jambalaya. (How would you say, “Let the good times roll” in German?)

Blended Whiskey Barrel-Aged Porter (8.2% ABV)
How It’s Made:
Just released six months ago, the Wood Baron is Boulevard Brewing’s newest addition to its year-round bourbon barrel-aged beers. Forty percent of the beer is an Imperial Porter aged on vanilla beans and aged in whiskey barrels from Holladay Distillery in Weston, MO. The rest of the ale is a simple un-barreled Porter.
Why We Like It:
Boulevard calls the Wood Baron “an entry point into barrel-aged beers,” and you can see why. Because of the blend, it’s much lighter than you would expect both in body and strength. Yet, it still doesn’t sacrifice flavor. You can really taste the vanilla even more than the whiskey barrel, in a good way. Think of this beer as a smooth, tricked out porter — great if you want the flavor of a barrel-aged beer but not the weight.
