Hazy IPA
This beer is so much a little bit something and a little bit something else.
First, it’s the product of two breweries — our own Three Notch’d Brewing Company and Ocelot Brewing Company up in Dulles, VA — right next to the airport.
Ocelot Brewing opened in April of 2015 and is the brewchild of Adrien Widman, a former homebrewing IT guy who decided to make a place for his love of beer and love of music. Not only does Ocelot frequently name their beers after songs that they like, but the name “Ocelot” itself comes from a Phish song. Their logo is a guitar pick, and apparently they’ve turned an old Marshall amp case into a portable tap that they take to beer festivals.
The On the Up is a hazy IPA that has a little bit of West Coast and a little bit of New England Style going for it. They start with Pilsen, Vienna, Carapils, and rye malts (which excites us, ‘cause we always prick up our ears when we see people playing with rye). These malts make for a light malt backbone that really lets the hops take the spotlight, and, believe us, this IPA is all about the hops.
Three Notch’d and Ocelot bitter this brew with Vic Secret, Centennial, and Simcoe cryo hops. The Australian Vic Secret does exactly what you hope an Australian hop will, deliver pineapple and even peach notes, while, in contrast, Centennial does its West Coast C-hop job throwing in citrus and pine. Just to dial the piney, resiny flavors up to eleven, we get cryo hop processed Simcoe. So it’s like the fruit notes are regally strolling down the red carpet accompanied by their entourage of juggling and tumbling pine notes that give a flourishing bow at the finish.
It’s a little bit something, a little bit something else, all adding up to a lot of good.
