How It’s Made:
Not only does Domaine Benjamin Taillandier ferment his organic grapes using native yeasts, but he also allows them to be infected with lactobacillus bacteria for an extra little lactic acidity. He then ages the wine for six months in stainless steel vats.
Why We Like It:
The Six Roses is one of the lightest rosés that we have tasted recently. Believe it or not, it’s low acid because it doesn’t need a lot to balance out the light fruit. There are touches of strawberry in the background, but it’s more the case that drinking this southern French rosé is like drinking rose water.

100% Lagrein (Wine of Italy)
How It’s Made:
Lagrein is a red grape native to northern Italy’s Trentino region (most likely). Here, Weingut Pranzegg (from the town of Pranzegg) uses their biodynamically grown Lagrein from Trentino’s Bolzano Valley basin. They foot stomp the grapes and then spontaneously ferment them in open top neutral barrels. They let the wine rest on its lees for an extended period before bottling it unfined and unfiltered with minimal sulfur added.
Why We Like It:
It’s a super natural northern Italian red that is still very approachable — full-bodied with wild fruit notes to give it character and a slight astringency on the finish. Let it breath a little before tasting to mellow some of the wilder notes.

Black IPA (7.8% ABV)
How It’s Made:
Redbeard starts this marvel of a Black IPA with Pale, Carafa II, Aromatic malts, and a touch of roasted Cararye malt. They bitter this bill with a quartet of famous West Coast “C” hops — Citra, Columbus, Cascade, and Chinook.
Why We Like It:
We love how Redbeard underplays the hops in this IPA, even though the ones they're using could deliver some high-powered bittering. The addition of rye is inspired as it blends with the hops to give this ale an almost a smoked quality. Have this beer just cool, almost warm, to get the full rauchbier-like experience!
