How It’s Made:
Domaine des Cognettes makes this white from hand harvested organic grapes, which they ferment in vitrified underground vats for three to six weeks. They age them on the lees in the same tanks from eight to fourteen months.
Why We Like It:
What’s great about good Muscadet Sèvre et Maines is that they both give you the crisp minerality that you want in addition to depth and character of fruit.

Grenache, Syrah, Carignan (Côtes du Rhône AOC)
How It’s Made:
The Rocca Maura collective winery has been making wine since 1922. Today, they are a part of Les Vignerons de Roquemaure. Rocca Maura makes this Côtes du Rhône mostly from Grenache, as you would suspect from a southern Rhône red. After destemming their grapes, they crush them and let them macerate for three weeks. After fermentation is complete, they age wine wine, on lees, in concrete.
Why We Like It:
This wine is an enjoyable southern Rhône red based on a core of strong, plummy berry fruit wrapped in a blanket of soft and spicy tannins.

How It’s Made:
We don’t know the specifics behind how Purcellville, VA’s Adroit Theory makes this black beauty, but we’re happy for their dedication to really rich, inky stouts.
Why We Like It:
This Imperial Russian Style Stout pours like motor oil, drinks like liquid silk, is a little sweet to balance off the roasted malts and burnt caramel notes, and is just a little boozy. What’s not to like in all that?
