Dark Lager with Corn
The Content Modulator is a collaboration between Casita Brewing Company and Shared Brewing Company.
Casita Brewing Company is based just south of us in Wilson, NC and is run by one of our favorite husband & wife craft brew teams, Mahalia and Ryan Witter-Merithew. Full disclosure — we’ve never taken the three and half hour drive down south to meet them; they just seem really nice on their website. We’ve met their beer though, and we sure have liked it.
Shared Brewing Company is based in Maplewood, MO, and is — you’re going to love this — a brewing collective made up of people who work for Side Project Brewing Company across the street. So, Shared Brewing is a side project of workers at Side Project. We swear, the craft beer world is the gift that just keeps on giving.
(By the way … Side Project is run by husband and wife team Cory and Karen King. You can only imagine what these two couples drink during card night with each other. Perhaps it’s this beer …)
The Content Modulator is a dark lager brewed with a loaded malt bill — Pilsner Malt, Munich Malt, Caramunich Malt, and Pale Chocolate Malt. If you think the resultant brew will be too rich, fear not. They also throw in some Carolina corn from Tuxedo, NC, all the way on the other side of the state. The corn thins and out and smooths the malt preserving the Lager lightness you want. For bittering, they turn to the king of German hops, that friend of lagers, Hallertau Mittelfrüh. The combination gives you a spicy Dunkel Lager with hints of cinnamon and allspice without any of those spices actually being used. Drink this brew just shy of cold.
